Creamy Spinach Twice Baked Potatoes

A nice twist on twice baked potatoes.. Cook time varies depending on which method you use to bake your potatoes.

Ingredients

  • 4 ounces cream cheese
  • 4 large baking potatoes
  • 2 tablespoons finely diced onion
  • 1 clove garlic, very finely diced (or shredded with fine microplane grater)
  • 1 tablespoon olive oil
  • 2 slices bacon, cooked until crisp and crumbled
  • 2 ounces shredded mozzarella
  • 1 bag of spinach
  • 1 Salt and Pepper to taste.

Directions

  1. Bake potatoes in oven or microwave.
  2. Carefully slice baked potatoes in half lengthways and allow to cool slightly.
  3. While potatoes are cooling, remove stems from spinach and give a rough chop.
  4. Heat saute' pan on medium heat.
  5. When pan is heated, add enough olive oil to coat pan bottom.
  6. Add onion to heated pan. Saute' until just starting to turn translucent.
  7. Add spinach and garlic to pan. Saute' until spinach is wilted.
  8. Add cream cheese to pan and stir well. When cheese is totally integrated, add salt and pepper to taste.
  9. Turn on broiler to high.
  10. Carefully scrape insides or baked potatoes in a large bowl, leaving skin intact.
  11. Place spinach mixture in a large bowl with the insides of potatoes. Mix well.
  12. Add mixture back to inside of potatoes.
  13. Top each potato with bacon and mozzarella. I tend to skimp on these for the sake of the calories, you may double each if you desire.
  14. Broil on high until cheese just starts to turn brown.
