West Indian Dark Chocolate Peanut Pie

This peanut pie is as simple to make as it is decadent. Serve warm with a scoop of coffee ice cream or your favorite ice cream or drizzle with prepared caramel sauce with a sprinkling of sea salt, if desired.

Ingredients

  • 1 prepared pie crust
  • 2 eggs
  • 1/2 cup dark brown sugar
  • 1/2 cup maple syrup
  • 1 teaspoon pure vanilla
  • 1/2 tablespoon instant coffee granules
  • 12 ounces Philadelphia Dark Chocolate Indulgence
  • 1 1/2 cups salted, roasted peanuts
  • 1 pint coffee or favorite ice cream
  • 1 jar prepared caramel sauce (optional)

Directions

  1. Preheat oven to 350 degrees F.
  2. Press pie crust into bottom and up sides of 11X1 inch fluted tart pan with removeable bottom.
  3. Beat eggs and brown sugar in large bowl until sugar dissolves.
  4. Beat in maple syrup, vanilla, instant coffee, and 8 ounces of the Philadelphia Dark Chocolate Indulgence, blending well.
  5. Stir in 1 cup of the roasted peanuts and pour into prepared pie crust.
  6. Bake in preheated oven on middle rack 25 minutes.
  7. Remove from oven and spread top with remaining Philaddelphia Dark Chocolate Indulgence.
  8. Sprinkle remaining 1/2 cup peanuts on top.
  9. Serve with a scoop of ice cream or salted caramel sauce.
