Chicken Lemono and Orzo

This recipe was inspired by Chicken Avgolemono Soup, a traditional Greek soup made with lemon and egg. With Philadelphia Savory Lemon and Herb Cooking Cream, you can have a fabulous dinner in under 30 minutes that your family will absolutely love! Served chilled or hot, this dish is a wonderful trip to Greece that you can take in your own kitchen any night of the week!

Ingredients

  • 16 ounces orzo pasta
  • 4 cups vegetable or chicken stock
  • 1 medium zucchini, quartered and sliced
  • 1/4 pound baby carrots, sliced
  • 1 tablespoon olive oil
  • 1 1/2 pounds chicken breast, cut into 1” cubes
  • 10 ounces Savory Lemon and Herb flavored Philadelphia Cooking Creme
  • 1 lemon, sliced for garnish

Directions

  1. Bring stock to a boil in a medium saucepan.
  2. Add zucchini, carrots, and orzo pasta.
  3. Return to a boil, stirring often for 8 -10 minutes until the stock is absorbed into the pasta.
  4. Season chicken with salt and pepper to taste.
  5. Heat olive oil in a large pan, wok, or pot.
  6. Add chicken and cook stirring until chicken is browned and cooked through.
  7. Add orzo and vegetables to the cooked chicken.
  8. Remove from heat and stir in Savory Lemon and Herb Cooking Creme.
  9. Garnish with lemon slices.

    Thanks Katherine! I love Greek food!! Niko Niko's in Houston is AWESOME and their Chicken Avgolemono is the best in town! They have been featured on Diners Driv-ins and dives. I go once a month for Mousaka.. mmmm
