Mexican Corn

Sweet and spicy corn.

Ingredients

  • 16 ounces Cream cheese
  • 2 pounds Bag of frozen corn
  • 1 large jar of diced red pimentos
  • 1 small can of diced jalepenos
  • 1 1/2 cup of heavy cream

Directions

  1. Preheat oven to 350
  2. pre spray a large non stick casserole with a non stick cooking spray.
  3. place frozen corn in dish
  4. layer cubed cream cheese
  5. sprinkle jalepenos in an even layer
  6. then add chopped up pimentos
  7. cover with foil and bake for about 25 minutes
  8. remove from oven stir until smooth and add heavy cream
  9. recover and continue baking until hot and bubbly
