Shrimp & Avocado Crostini

Boiled Shrimp & Avocado Salad perched atop crispy, garlic French rounds! The Philadelphia Cream Cheese makes the avocados "sing"!

Ingredients

  • 4 ounces Whipped Philadelphia Cream Cheese
  • 4 Boiled Eggs, peeled and diced
  • 1 Large Avocado
  • 1 1/2 pounds Medium Shrimp, boiled or steamed
  • 3 tablespoons Green Onion tops, chopped
  • 1 tablespoon Parsley
  • 1 1/2 cups Mayonnaise
  • 1 Creole Seasoning Blend (garlic, onion, salt, cayenne pepper, black pepper, thyme)

Directions

  1. Place shrimp and eggs in two separate pots on stove top, and boil. Season shrimp with Creole Seasaoning blend, to taste. When boiled, peel and dice eggs and shrimp.
  2. Peel and pitt the avocado, and finely dice it.
  3. Combine all of the ingredients into a large bowl. Season with Creole Seasoning blend to taste.
  4. Place French rounds on a tray, and top each one with the salad. Optional: Garnish with paprika. Serve.

    Absolutely fabulous! Tried this for my niece's wedding. She's getting married in August and I'd love to win this to give it her for a wedding gift! Pink is her favorite color! I added some fresh dill instead of parsley and it was terrific!
