Lemon Cake In My Ice-Cream Cones

Try cooking your favorite cake mix in some ice-cream cones! I really stepped out of the box with this recipe, adding lemon lime soda to lemon cake mix instead of water, and the PHILADELPHIA Cream Cheese for that smooth texture. The cake mix baked really well in the ice-cream cones, and there you have it all in one. You can have your cake and eat it too, cake in a cone, topped with your favorite toppings and welcome to the party!

Ingredients

  • 18 ounces Lemon Supreme Moist Deluxe Premium Cake Mix (one box)
  • 3 Eggs
  • 1 1/3 cups Lemon Lime Naturally Flavored Soda
  • 1/3 cup Vegetable Oil
  • 4 ounces PHILADELPHIA Cream Cheese (Softened)
  • 12 Cake Ice Cream Cones
  • 2 ounces Cocoa Natural Unsweetened
  • 1 cup Confectioners Sugar
  • 1/2 teaspoon Vanilla Extract

Directions

  1. Preheat oven to 350 degrees.
  2. Place ice-cream cones in each 12 cupcake pan holder. (set aside)
  3. Follow directions on cake mix box.
  4. In medium bowl, add cake mix, eggs, lemon lime soda(instead of water), vegetable oil, stir in cream cheese.
  5. Blend cake mix mixture on low speed until moistened.
  6. Beat at medium speed until smooth and creamy.
  7. Spoon 1 1/2 tbsp batter into each cone.
  8. Bake for 30 minutes.
  9. For icing: In medium pot, add cocoa, powdered sugar, vanilla and 4 tbsp water.
  10. Stir icing constantly over low heat for 2 to 3 minutes until heated thoroughly until smooth and creamy. (set aside)
  11. Take ice-cream cone cakes out of oven, put on cooling rack. (set aside)
  12. Drizzle icing over ice-cream cone cakes while still warm.
  13. Sprinkle generous amount of powdered sugar over cakes if desired.
  14. Put favorite toppings over cakes: sprinkles, ice-cream, feel free to use favorite cake mix flavor.
  15. Store any remaining batter in tightly covered container in refrigerator, can be used for cupcakes.

    Marilyn- I remember making cake in cones back in the day, and I totally forgot how to do it...so glad you posted this. I think it's way better than using the muffin liners. It makes more sense too since everything can be eaten.
