Petite Cassata Cakes

My family loves cassata cake! This recipe was inspired by my mother, because she always doesn't want a large serving!.

Ingredients

  • 8 ounces Philadelphia cream cheese
  • 8 ounces ricotta cheese
  • 4 ounces liquid coffee
  • 2 tablespoons light rum
  • 4 tablespoons shredded sweetened coconut
  • 10 maraschino cherries
  • 1 package hot coca mix
  • 1 tablespoon cinnamon
  • 1 already made sponge cake
  • 2 tablespoons powdered sugar

Directions

  1. Mix cream cheese, ricotta cheese, powder sugar, cinnamon, and coconut. Place in a piping bag.
  2. brush cake with rum, then cut in squares.
  3. place cherries on a paper towel, so the juices are out. then cut them in half.
  4. pipe cheese mixture to the size of a dime place a cherry on each one. then a little more cheese, then top with a piece of cake.
  5. place another layer of cheese mixture and cover with cake.
  6. Sift cocoa powder on each one. Serve with coffee in a shot glass for them to pour over.
  7. If there is any mixture left over, place a on the corners of the plate!

    Thanks everyone!, not really Coleen. When I make dishes, my goal is to have them run in mutual ingredients. Mixing ricotta and cream cheese together, basically is a cheap version of marscapone. my hidden talent is learning how to always substitute and using whats in the fridge. LOL
