Ham and Zucchini Carbonara

Pasta is a life-saver when you need to cook a quick meal on a week night. Making a cream sauce for that pasta, however, is not a very quick process, but with the help of Philadelphia Cooking Creme, it's possible to make a quick and creamy sauce without browning the flour, simmering, and etc.

Ingredients

  • 1 box of penne rigate pasta
  • 10 ounces PHILADELPHIA Cooking Creme
  • 8 ounces smoked thick sliced ham
  • 2 medium zucchini
  • 1/2 cup shredded parmesan cheese

Directions

  1. 1. Place a pot of water to boil.
  2. While the water is boiling, cut the ham and the zucchini into short slices about the length of the pasta.
  3. When water comes to a boil, place the pasta into the water, and cook according to directions, about 8-10 minutes, stirring occasionally.
  4. While the pasta is cooking, heat a skillet sprayed with cooking spray.
  5. On medium high heat, saute the ham until lightly browned, about 5 minutes.
  6. Add the zucchini and cook, covered, for about 7 minutes, or until slightly softened.
  7. Add the cooking creme and stir until melted.
  8. Drain pasta, and serve the sauce over pasta, liberally sprinkling with grated parmesan cheese.

    Yum. Sounds so good. I like ham in mine as well or bacon bits. Sometimes I add peas and serve it over tortellini.

    I love ham and pasta and Lord knows we all have tons of zucchini from our gardens... this is a fantastic way to put these ingredients together! Beautiful photo too! Way to go, monixo
