Crispy Italian Chicken with Roasted Tomatoes

This was inspired by my favorite crispy chicken dish. I wanted to give it a new flavor twist, and adding the Philadelphia Italian Cheese & Herb Cooking Creme was the perfect way. With just one ingredient, I was able to add so much flavor to the chicken. The slightly tangy and juicy roasted tomatoes are the perfect foil to the rich cooking creme and crispy chicken.

Ingredients

  • 4 small boneless skinless chicken breast halves (1 pound)
  • 10 ounces Philadelphia Italian Cheese & Herb Cooking Creme
  • 3/4 cup panko bread crumbs
  • 1 nonstick cooking spray
  • 1 1/2 cups cherry tomatoes

Directions

  1. Heat oven to 400. Place chicken breasts in shallow bowl; add 1/4 cup Cooking Creme and turn chicken breasts to coat. Coat chicken with crumbs; place in 8-inch square baking dish. Spray tops with nonstick cooking spray. Bake 20 minutes or until done. If desired, place under broiler for 1 to 2 minutes to brown top more.
  2. Meanwhile, place tomatoes in another 8-inch square or 9-inch round baking pan. Spray lightly with nonstick cooking spray; season with salt and pepper to taste. Bake along with chicken for 10 to 15 minutes or until tomatoes pop and look roasted.
  3. Spoon remaining Cooking Creme into microwavable bowl. Microwave on 50% power for 30 seconds to 1 minute or until warmed, stirring after 30 seconds. Serve chicken with warmed cooking creme and tomatoes.
