Italian Stuffed Tomatoes

My daughter brought me a huge basket full of beautiful Beefsteak tomatoes from her garden. I LOVE, LOVE, LOVE the flavor of sun-ripened tomatoes. They just taste like Summer! I wanted to come up with a recipe that showcased these beautiful works of nature; something I'd be proud to serve for lunch or dinner. After eating these delicious tomatoes, stuffed with the savory and hearty filling, I know I'll be making these again and again!

Ingredients

  • 1/2 pound Italian sausage, either hot or mild, whatever your preference
  • 1 cup prepared Quinoa
  • 2 green onions, both whites and greens chopped
  • 1/2 tub (5 ounces) PHILADELPHIA Italian Cheese and Herb Cooking Creme
  • 4 Large Beefsteak Tomatoes

Directions

  1. Preheat oven to 350 degree.
  2. In a large nonstick skillet over medium-high heat, cook sausage until cooked through and no longer pink.
  3. While sausage is cooking, Hollow out tomatoes discarding most of the seeds and core. Reserve about 1/2 cup of the tomato meat, finely chopped.
  4. Set cored tomatoes upside down on platter to drain any excess juice.
  5. After sausage is browned (takes about 4 minutes), add prepared quinoa, chopped green onions and cook for about 1-2 minutes until heated through.
  6. Off the heat, add PHILADELPHIA Italian Cheese and Herb Cooking Creme and stir until cheese is completely melted and incorporated with quinoa and sausage.
  7. Fill the tomatoes, dividing the stuffing evenly between them.
  8. Spray a 8 x 8 glass baking dish with cooking spray and place stuffed tomatoes in dish, being careful to have them not touching.
  9. Bake for 15 - 20 minutes or until the stuffing is completely heated through.
  10. Serve while hot and enjoy!
