Grilled Salmon & Sundried Tomatoe Creme

I used PHILADELPHIA Cooking Creme to transform a piece of grilled salmon into a four star dish that can be created in 20 minutes. I coated the salmon with brown sugar and topped it with a mixture of sundried tomatoes, fresh basil and PHILADELPHIA Cooking Creme Original to create a sweet and tangy entrée that everyone will love!

Ingredients

  • 6 ounces PHILADELPHIA Cooking Creme original flavor
  • 1 pound fresh salmon, skin removed
  • 3 tablespoons brown sugar
  • 4 leaves fresh basil
  • 4 ounces sundried tomatoes in oil
  • 1 cooking spray
  • 2 pinches kosher salt
  • 2 pinches cracked black pepper

Directions

  1. Preheat grill pan to 350 degrees and spray with cooking spray.
  2. Sprinkle both sides of each salmon fillet with kosher salt, black pepper, and 1 Tbsp of brown sugar.
  3. In a cuisinart combine 6 ounces of PHILADELPHIA Cooking Creme and 4 ounces of sundried tomatoes in oil. Don't drain too much of the oil off of the sundried tomatoes.
  4. Remove the PHILADELPHIA Cooking Creme mixture and place in a sauce pan and heat on low temperature.
  5. Place salmon on grill pan and cook for 4-5 minutes on each side or until desired doneness.
  6. Chop basil and set aside.
  7. Remove mixture from the heat and stir in basil.
  8. When salmon is cooked, remove it from the grill pan and top with the sundried tomato mixture and serve.
