Georgia-Fried Chicken with Sunshine sauce

My daughter took a trip last week to Atlanta, and on her way back to Florida, she picked up some gorgeous big Georgia Pecans. I'm always on the look-out for new ways to make chicken, so I made dinner for her and her partner using these sweet Georgia pecans, and her favorite combo of honey and oranges. The Pecans and Panko crumbs made the chicken perfectly crispy and light on the outside, and the Chicken moist inside. The creamy sweet sauce looked like rivers of sunshine, and was a super contrast of flavor! I like to think of this as my Georgia-meets-Florida dinner!

Ingredients

  • 2 tablespoons Honey
  • 1 Egg- beaten
  • 1 teaspoon Garlic- minced
  • 1/2 cup Georgis Pecans, shelled, chopped
  • 1/2 cup Panko bread crumbs
  • 4 Chicken Breasts- Boneless, skinless
  • 1 cup Honey
  • 2 Sticks Butter
  • 1/2 cup Orange Juice
  • 4 ounces Philadelphia cream cheese- softened

Directions

  1. Preheat oven to 400 degrees. Line baking sheet with foil.
  2. In a dish (shallow type) mix honey (2T), egg, and minced garlic. In another shallow dish mix pecans with Panko crumbs (add a little salt to crumbs)
  3. Sprinkle chicken pieces with a little salt, then dip into the egg/honey mixture. Roll immediately into crumbs and pecan mixture, pressing it down into crumbs.
  4. Place on baking sheet, and sprinkle remaining nut mixture on chicken, pressing down. Bake for 20 minutes, or until browned.
  5. While chicken bakes, mix the Sunshine sauce. Melt in a frypan the butter over low heat. Stir in honey, orange juice, and cream cheese until hot and smooth.Bring to a simmer, and pour over chicken breasts.
