Happy Monday, Everyone!
Grab those backpacks, sharpen those pencils…it’s time to go back to school. Well, RWOP Cooking School, that is!
Each day, we’ll present our favorite cooking term, technique, tool or ingredient, some of our favorite insider tips and one of YOUR recipes that demonstrates the lesson of the day! Let’s face it—who knows how to cook better than this community, right?
This week, it’s all about those cooking basics! Are you ready for our first lesson? No need to grab your dictionary, because we’ve got this term covered:

Want to know some foods rich in umami? We’re talking shellfish, cured meats and vegetables, such as mushrooms and ripe tomatoes!
Speaking of ripe tomatoes, we love this recipe for SMOKED GOUDA AND TOMATO MINI CHEESECAKES from DONNA STAHL. Can you say umami? Yum!

Alright, Real Women of Philadelphia, its homework time (sort of)...
Umami is one of five tastes, along with:
Bitterness
Sweetness
Saltiness
Sourness
Which taste are YOU and what is your favorite recipe/food that falls into this taste category?

I love the sweet & salty also ! I love pretzels with a glass of milk ! Chocolate milk makes it even better. -
Sweet and Salty, nothing hot, crispy and salty french fries followed by a rich, sweet, creamy chocolate shake....Salted Caramel....Trail mix with salty nuts, sweet fruit and chocolate or Hot, buttery and salty popcorn w/M&M's, oh so good. -
I am all about the sweet and salty. I do a carmel popcorn with pretezel pieces, cereal, mixed nuts, dried carnberries and whatever else I might have on hand like chocolate or butterscotch chips and miniature marshmellows after the carmel has cooled slightly. I didnt say it was healthy just good. -

I'm definitely a sweet & salty kind of gal. Think dark chocolate covered bacon or perhaps a glazed donut with bacon sprinkles... -

I must be Umami as my favourite foods are meaty: beef, sausages, lamb, chicken, pork.
Favourite foods?
So many.
But Pizza loaded with beef, chicken, pepperoni, and loads of thin sliced tomato and onions sets my heart and soul afire!!

Congratulations to you Donna! I love this Japanese word "Umami" and I would have to share that my version of the New Orleans original MUFFULETTA in Season 2 would have umami! -

Thanks for all the congrats ladies!!! I am a sweet and salty kinda girl for sure. Especially something with some texture too. I just made a caramelized onion dip that was a little sweet and dipped crunchy kettle chips in it. I could have died right there! -
Carol-Ha-we have got that in common, when I first met my husband I sent him off with a Homemade pirogi lasagna. Then I sent him a love letter with an invitation to my house with a menu of what was to be served. Been happily married for over 7 years and boy do I love to cook that man some great food. He complimented the other day and said it is how you treat a lady-like crap you get the bare minimal -treat you her god and you you get the amateur chef, etc... So sweet, I am so blessed and so nice to hear your stories, everyone's. Everyone have a relaxing and peaceful night. -

Portabello mushroom burger with grilled onions and arugula! monixo -
Creampuff, your oven baked spaghetti with fresh tomato sauce, Mozzarella/Provolone cheese and pepperoni slices..oh my! nummy! -
I love sweet and salty. When I make old fashioned chocolate walnut fudge, after spreading it in the pan and still warm I generously sprinkle the top with Kosher salt. The sweet with the salt really makes the chocolate pop like you have never tasted before. Just give it a try and see for yourself. I am drooling, just may have to make some real soon. -
Congratulations Donna! This recipe sounds amazing - I LOVE appetizers and can't wait to try this recipe. I am definitely salty - cheese and rice crackers are my downfall! -
I'm a salty, but Umami covers all my taste & is a great description for my Oven Baked Spaghetti with a fresh tomato sauce, Mozarella/Provolone cheese melted on top with pepperoni slices. A fresh romaine salad topped with a yellow stripey tomato & a fresh green bell pepper diced, drizzled with a red wine/rasberry vinegrette. Umami! what a combination of flavors to satisfy the taste buds! Bitter, sweet, salty & sour. The fifth ingredient that I use is a touch of hot jalapena pepper simmered in the tomato sauce. It adds the finishing touch to an already great umami combination. Simple, yet both satisfying & delicious! -
Hi, happy Monday to you all!
