My 1/2/3's is for school lunches. Raising three kids was exhausting and I always wanted to provide great lunches instead of just cafeteria foods so once a week I would make a different fresh calzone the night before with some great local dough (sometimes from scratch but usually the local pizza parlor), then I'd get some great deli meats or chicken and cheeses and make the calzone. Then I'd make some cookie dough while it baked and make a batch of cookies to include with the calzone. I would have a case of water on hand for beverages. Then 1) wrap a nice piece of calzone 2) put a few cookies in the bag and 3) put the water in as beverage then put the lunch bag in the fridge for the next crazy morning! It was a God send. Oh, and I'd put a little note or kiss the napkin with red lipstick on so they'd know I was thinking of them.
I still make calzones for my high school aged son David. -
Instead of driving to McDonalds and paying for Egg McMuffins, I premake them for easy next day morning school day breakfasts. English muffins, slice of american cheese single, 1 slice canadian bacon and microwave an egg in a small round dish for 40 seconds. Perfect and easy! -

My 1.2.3. for getting the kids to bed is:
1. Teeth brushing and Jammies
2. Story Time (I read to them for 30 to 60 min. depending on how fast they complete #1.)
3. Lights out. (@ 9:00)
Having them understand that they have the ability to control how much reading time we have helps teach them consequences of their actions! ;o) -
RWOP Girl, layer one ice chest with two layers of shucked corn and pour about two gallons of boiling water over the corn and shut the ice chest. Corn will be cooked in about 30 minutes and will stay serving temp for about 2 hours. Partially boil however many pounds of shrimp you need for your group of people. Dip the shrimp out of the water and place in another ice chest and the shrimp will continue cooking and hold at serving temperature till needed. Gather the remainder of condiments, big salad and french bread and you are good to go. -
The three things I keep on hand that are essential for entertaining, are
1. A sense of humor
2. A generous spirit
3. Good Manners
I find when these are served, any event is a success, leave any out, and your guests, may leave feeling unfulfilled :) -
I always keep a mini variety of cheeses on hand for entertaining and extra bottles of wine in the refrigerator in case. Add some fresh seasonal fruits and you have yourself a wine and cheese/fruit tray quickly. Freeze a loaf or two of artisan bread, add a jar of store bought international spreads like a sun-dried tomato artichoke spread, slice the bread thinly, toast and it make your appetizers. Note: I have found that freezing blocked cheese is ok if you are just going to add them to a cooked recipes, because they will get crumbly when frozen, buty better than tossing away if not eaten. -

1-2-3 for Easy Entertaining...
I always keep some of my unfilled appetizer puffs in the freezer...they defrost quickly and can easily be filled with my 2 ingredient Shrimp Mousse filling!! -

I always keep individual servings of bread pudding in the freezer. In an instant they are thawed and ready to go anywhere any time. -
Once a month and usually on a Sunday I make a batch of over-sized homemade biscuits! When we enjoy some for breakfast, I take the rest of the batch and slip in baked bacon strips or sausage patties or Canadian bacon or Scrambled eggs if I made some! Wrap them in a white paper towel and put them in the freezer. When we are on the run and need something quick... 1, 2, 3 - just take one from the freezer, place it in the microwave and reheat. Instant, effortless home made breakfast! Serve with condiments and go! -
Cream cheese on a bagel! Boil up a dozen eggs to give out to those little ones, couple with a nugget of yogurt and bada bada bing your done. I learned this from my daughter-in-law. -
Easy 1-2-3 Breakfast
1. Put a slice of whole wheat bread in the toaster.
2. Beat one egg in a small bowl and microwave for 1 to 1/2 min.; until just cooked.
3. Scoop egg onto toast and top with salsa.
This will keep you full AND energized until lunch time...and easy enough for the kids to make : )) -
When my house isn't at it's cleanest and I have company coming over I clean the rooms they are going to see. 1. I carry a clothes basket with me to temporally store things that don't go in that room. 2. I have furniture polish, air fresher and glass cleaner in the basket. 3. As I leave the room I spray air fresher or light candles. I store the basket of stuff in my closet until I can unload it. Disaster avoided!
